Raspberry Lime Mocktails Perfect for New Year’s Eve

As you all know, we have been busy this week preparing for our New Year’s Eve celebrations. We are anxiously awaiting the new year and are looking forward to all it will bring.

Today our amazing Alanna created the most delicious and refreshing Raspberry Lime MOCKTAILS that will for make the PERFECT drink to share with your entire family. These nonalcoholic beverages are sure to be a hit! We could go on and on about how good they are but we’ll let you try them for yourselves!

Ingredients

1 Cup Sprite

16 Cubes of Ice

2 Tablespoons Fresh Lime Juice

1/2 Cup of Raspberries

1/3 Cup of granulated Sugar

2 Tablespoons of Torani Coconut flavoring

DIRECTIONS

First you will want to make your raspberry sauce by placing fresh raspberries and the sugar in a sauce pan on medium heat,  stir and smash raspberries till it becomes more sauce like. Simmer for ten minutes to thicken and make sure to stir occasionally to prevent burning.

Once sauce is thickened remove from heat and strain out the seeds.

(You now have your raspberry sauce for the drink.)

Line the rim of your cup with lime juice and dip in sugar to give your rim a little love.

Next place ice and lime juice in blender and blend until smooth

Place the raspberry sauce on the bottom of the cup , then place lime ice in cup, add 1/2 cup of sprite to each cup , and add 1 Tablespoon of the coconut syrup to each cup. Garnish with fresh raspberries and mint leaves and there you go!!

**Recipe makes two 8 OZ cups**
