It’s Monday and we thought we’d start your week of right with a little meal inspiration! We are always looking for new recipes and this Teriyaki Chicken and Veggies with Quinoa gets our stamp of approval!! Grab the recipe below and try it out for yourself!
Teriyaki Chicken and Veggies with Quinoa
2 chicken breast cut into bite size pieces
1 Bell Pepper sliced bite sized pieces
2 Full Sized Carrots sliced into bite sized pieces
1 Medium Yellow Squash/Zucchini sliced in bite size pieces
1 cup uncooked Quinoa
1 Green Onion chopped
1 Tablespoon olive oil
1 1/2 cups chicken broth
1 cup soy sauce
1/2- 1 cup of brown sugar( depends on how sweet you like it)
2 cloves garlic minced
1/4 tsp ginger powder
1/8 tsp black pepper
Whisk all sauce ingredients together. Set aside.
Rinse quinoa, then place in rice cooker. Add in 1 1/2 cups of chicken broth and press start.
In a medium sauce pan add in oil. Place cut chicken in and cook till it’s about 50% done. Add in teriyaki sauce bring it to a simmer and turn heat down. When chicken is cooked to 165 degrees f. Add in veggies. ( carrots, onion, bell pepper, zucchini) Stir. Let cook for 5 minutes. Then take off heat. Put cooked quinoa on the bottom of the bowl and add teriyaki mixture on top. Super delish!!!! Serves 4-5 people. And takes 30 minutes start to finish.
