Lemon Raspberry Macarons

Hello Friends!!!! Alanna here, I was going to write up the directions on how I made my macarons but instead I linked the Youtube video that helped me out instead! It’s much easier to watch and understand than explain through words. (I used her Macaron batter recipe only.)

Macarons Recipe:
1 cup Powdered Sugar
3/4 cup Almond Flour
2 Egg Whites (room temperature)
1/4 cup Granulated Sugar
Food Coloring (optional)


Cheesecake filling recipe:

  • 1- 8 oz. Cream Cheese (softened)
  • The juice from 1 Lemon
  • 3 Tablespoons Sugar                                                                                                              Cream the cream cheese and sugar until smooth. Add lemon juice until its all smooth. Place cheesecake filling into a pastry bag and pipe onto the cooled macaron, make a circle on the macaron and in the middle add a fresh raspberry place the other macaron on top and sandwich together  and refrigerate for an hour, then top with your favorite fresh berries. Serve and enjoy that day or place in the freezer and pull them out when you want a treat. (stays good for about a week in the freezer in a freezer bag)
